Origins of Wazwan

The origins of Wazwan can be traced back to Central Asia and Persia. It is believed that skilled chefs, known as wazas, came to Kashmir centuries ago along with Central Asian influences. Over time, they blended their cooking techniques with local Kashmiri ingredients, giving birth to what we now know as Wazwan.

One popular belief links the evolution of Wazwan to the reign of Sultan Muhammad of Kashmir (14th century), when Persian culture and cuisine began to strongly influence the region.

The Role of Wazas

Wazwan is traditionally prepared by wazas, highly trained Kashmiri chefs who pass their skills from generation to generation. Cooking Wazwan is considered an art, requiring precision, patience, and deep knowledge of spices and techniques.

Even today, authentic Wazwan prepared by experienced wazas is highly respected.

Why Wazwan Is Special

What sets Wazwan apart is:

  • Unique use of spices like fennel, dry ginger, and saffron

  • Meat-based dishes, especially lamb

  • Large communal servings, symbolizing unity and hospitality

A traditional Wazwan feast can include multiple courses, sometimes more than 30 dishes, served on a large plate called a trami and shared by four people.
